Ingredients for 3-4 servings
- 1 large lettuce (chopped)
- 10-12 cherry tomatoes (halved)
- 1 cup croutons
- 1 chicken fillet (roasted, sliced or diced)
- 250 g Smoked DOIRANI, peeled and grated
Dressing ingredients
- 3 tbsp olive oil
- 1 tbsp mustard
- 1 tbsp lemon juice
- 1 clove garlic (crushed)
- 1 tsp honey or agave syrup
- 1 tbsp grated parmesan (optional)
- Salt & pepper
Procedure
Grill the chicken fillet in a non-stick pan with a little olive oil until golden brown and sprinkle with salt and pepper.
Let it cool and cut it into strips or cubes.
Dressing: In a small bowl, mix all the ingredients until the mixture is smooth and uniform. Taste and adjust the acidity or sweetness if necessary.
Salad composition:
Start by placing the chopped lettuce in a large salad bowl.
Add the cherry tomatoes, chicken and croutons.
Pour the dressing on top and mix.
Finish by sprinkling with the Smoked DOIRANI.
Tip:
For extra flavor, you can warm the smoked cheese a little so that it softens slightly before adding it or grill the chicken with a little paprika for more flavor.
