Omelette with Tsocani and Arugula

Ingredients for 4 servings

  • 6 eggs
  • 1 red pepper
  • 1 green pepper
  • 1 tomato (not too watery)
  • 1 handful of arugula (for garnish)
  • 150g Tsocani DOIRANI
  • Salt & pepper
  • Paprika
  • Oregano

Procedure

Preheat the oven to 180°C.
Beat the eggs with salt, pepper and paprika.
Finely chop the peppers, tomato and Tsocani DOIRANI.
Add the vegetables and cheese to the egg mixture.
Grease a small baking dish and pour the mixture.
Bake for 20-25 minutes until golden brown.
Serve with fresh arugula, oregano and a little olive oil on top.
